This is the easiest stuffing ever! Simply whizz everything together in a food processor. If you dont have one, then finely chop everything Serves:12 Cooking time:45 minutes Ingredients3 slices of medium White Bread 150 g (5oz) Courgette, grated and juice squeezed out 100 g (3 1/2 oz) Dried APricots Handful of parsley 225 g (8oz) Sausage meat 2 tbsp Chestnut Puree Salt Freshly Ground Black Pepper 1 tbsp Olive oil MethodPreheat over to Gas 4, 180 C, 350 C. Whizz slices of bread in a food processor until fine breadcrumbs. Add courgette, apricots and parsley and whixx until finely chopped. Add the sausage meat and chestnut puree; season. Whizz until combined. Divide the mixture in half and reserve for the turkey. On a clean , lightly floured surface roll the remaining mixture into 12 small balls Brush a nonstick baking tray with a little oil and cook for 25-30 minutes until golden and cooked through Cooks tip: Serve the stuffing balls in fairy cake cases, brush the top of each stuffing ball with apricot jam and top with half a dried apricot.
