Ingredients 1 350g pack Quorn Pieces (defrosted if frozen) 1 medium onion, finely chopped 3 cloves garlic, finely chopped 1 tbsp olive oil 1 tsp ground coriander 1 tsp turmeric 2 lemons, juice only 30g fresh coriander leaves, finely chopped 50g pimento stuffed green olives, halved Method 1. In a large frying pan gently sauté the onion in the oil until it starts to turn golden. 2. Add the garlic and spices and cook for one minute, stirring to avoid sticking. Add the Quorn Pieces, making sure they are covered with the spice mixture. 3. Cook for four or five minutes, until the Quorn Pieces are lightly coloured and then add the lemon juice, three quarters of the fresh coriander and the olives. 4. Serve with basmati rice and garnish with the remaining chopped coriander.
