Serves 4 Preparation time: 5 minutes Cooking time: 16 minutes
Ingredients
350g Quorn Mince 2 tbs oil 2 cloves garlic, crushed 5cm (about 40g) fresh ginger, peeled and grated 3 – 4 tbs Hoi Sin sauce (a spicy plum sauce) 175ml water 2 tsp five spice powder 1 large orange pepper 1 large yellow pepper 4 tsp sweet chilli sauce 1 tbs sesame seeds, toasted
Method
1. Heat oil in a medium saucepan. Add garlic and ginger and fry gently, stirring for about 30 seconds. Add Hoi Sin sauce, water and five spice powder and stir well. Add the Quorn Mince. Simmer for 5 minutes, stirring frequently until the Quorn has softened and the mixture is moist.
2. Cut the peppers in half lengthwise, removing the seeds and pith. Place the pepper halves, cut side up in a microwave dish. Fill each half with the Quorn mixture. Put about 2-3 tbs water in the base of the dish and cover dish with cling film.
3. Pierce the cling film in three places and microwave at full power (800 watts) for about 8-10 minutes until the peppers are cooked. Discard the liquid in the dish.
4. Top each pepper with 1 tsp sweet chilli sauce and sprinkle with toasted sesame seeds. Your favourite savoury rice or noodle dish makes an ideal accompaniment.
