SMOKED SALMON ROULADE WITH AVOCADO This is just big enough to start your heavy Christmas dinner. For each person you will need: INGREDIENTS 1 large thin slice of smoked salmon (approx. 50 g/2 oz) 50 g/2 oz cream cheese 1 tbsp olive oil 1 tsp chopped parsley ½ ripe avocado Juice of half a lemon Pinch of sugar and salt 1.Mix together half the lemon juice, the cream cheese and the chopped parsley, and spread the smoked salmon with it. Roll up into a cornet shape and place neatly on a plate. 2.Cut the avocado in half and remove the stone. Peel it carefully using a sharp knife. Put a half face down and cut lengthwise into thin strips without quite severing the pear at the pointed end. Put onto the same plate as the smoked salmon and press gently with the heel of your hand. You will find the pressure will turn each of the avocado halves into a very attractive fan. 3.Mix the remaining lemon juice with the olive oil, salt and sugar, and pour over the avocado. This should not be kept with the cut avocado for more than half an hour. Keep in the fridge under cling film to maintain its pristine condition.
