A great way to use up that excess Christmas turkey Ingredients500 g puff pastry 1 tsp lemon juice 4 tbsp cold stuffing 250 g cooked turkey, roughly shredded 8 tbsp cranberry sauce 1 egg, beaten 100 g shelled walnuts Parsley, stalks removed 25 g Parmesan, grated 2-3 tbsp olive oil MethodPreheat oven to 220C, 425F, Gas 7. Roll out the pastry on a floured surface, until 5mm thick. Cut into quarters. Place 1 tbsp stuffing onto each pastry square and top with a quarter of the turkey and 2 tbsp cranberry sauce. Dampen pastry edges with water, then bring all four points up to meet in the middle. Pinch the edges together, crimp to seal and place on a baking sheet. Brush with egg and cook in the oven for 30 minutes until golden. Meanwhile, whizz the walnuts, parsley and Parmesan in a food processor until mixed, adding the oil gradually. Add lemon juice to taste. Serve the pasties warm, drizzled with the walnut sauce.
