Most pastry recipes qualify as tea cake recipes. In keeping with the character of tea party fare, though, it is better to serve mini-portions of two or three tea cakes than full-sized servings of one variety. Biscuits are a natural choice, and so are sheet/tray bake cakes, brownies, and baklava, because they can be cut to any size you want. But lots of other dessert recipes, like eclairs and cream puffs can be adapted. Tea cakes, like any dessert, are served last, after scones during Light Afternoon Tea or sandwiches and scones during Full Afternoon Tea.
