Here is another one my mum makes for St.Nicholas..that is 5th and 6th December and we always celebrate this by putting our shoes out with something for the reindeer and St Nick. We get a small gift in return. This is sorta a rather rich 'donut' with a cream filling. Oliebollen Ingredients: 2 cups all purpose flour (plain flour) 1 package yeast 3/4 cup lukewarm milk 1 egg 2/3 cups raisins 1 heaping tablesp. mixed candied fruit, chopped 1 tart apple (cooking apple), peeled, cored and minced/finely chopped grated peel of 1/2 lemon pinch of salt Method: 1) Shape small round cream puffs from the dough and fry in oil until golden - Drain on paper towels 2) With a small sharp knife cut a hole in each puff , insert pastry bag filled with whipped cream into hole and fill each " snow ball" with whipped cream 3) Roll in icing sugar and serve
