To cook SALMON to be eaten cold, plunge into boiling water containing a little lemon juice, salt and pepper. Keep it on the boil for 3 minutes and leave to cool in the liquid.
To cook SPRATS without frying, roll them in seasoned flour and thread onto metal skewers. Place in a greased meat tin and cook in a hot oven for 20 minutes or so.
When grilling KIPPERS put a couple of tablespoons of water under them they will keep moist.
